Poha Preparation Time: 10-15 minutes ⏰

Ingredients:
1 cup Poha (Flat Rice)
½ cup water
¾ tbsp oil
¼ tsp cumin seeds
8 to 10 pieces of peanut/cashew/raisin
⅓ cup onion/potato
¼ tsp small pieces of green chili
¼ cup corn
¼ tsp turmeric
1 tsp brown sugar
1 tsp fresh lemon/lime juice
½ tsp salt
Cilantro and sunflower/hemp/pumpkin seeds for garnish
Preparation:
Wash the flat rice with room temperature water for a couple of times. Drain out excess water and then soak it with half a cup of water for 5 minutes.
In a pan, pour the oil of your choice on low heat. Add cumin seeds in the warm oil, waiting for 5-10 seconds until they turn light brown, then add a few pieces of peanuts. Peanuts can be substituted with cashews and raisins. Keep stirring until they also turn light brown. Put in onion, potato, or any other vegetables of your choice. Add turmeric (also known as Golden Goddess! check its scientifically proven health benefits here) at this point, and keep stirring for a few minutes until the vegetables are cooked and become tender.
Once the vegetables are cooked, add the soaked flat rice, sugar, lemon juice, and salt. Mix everything for a few minutes until the whole mixture is warm. Then, turn off the heat. Garnish the mixture with cilantro and seeds of your choice for extra nutrition and flavor.
This recipe can be eaten during breakfast, lunch, a light dinner, or as a snack.
