Oat Almond Burfi – The Best Sweet Treat for the Winter

Oat Almond Burfi is one of the best nutritious recipes for the winter season. According to Ayurveda, in the winter season, vata dosha (elements of air and space) in our body easily become unbalanced. The element of fire concentrates more on the core; it is the reason we feel more hunger in the winter season. This is why we can digest heavy food easier in winter than in summer.

Oat is one of the best grains for the winter season because it is full of carbs, protein, and fiber. It provides unctuousness to body tissue which keeps air and ether elements in balance and prevents dryness. Almonds provide healthy fat and they are full of vitamins and minerals. They are not hard to digest with strong digestive power during the winter season.

Oatmeal is a staple breakfast choice for many people in North America. But when oat combines with quinoa, nuts, flat rice, and spices, it makes a very delicious recipe which everyone loves, including children! Here is a stellar recipe for breakfast oatmeal.

This recipe has healthy grains, fats, sweeteners, and spices, which make the perfect nourishing satisfying snack to stay rejuvenated during the vata vitiating season.

Burfi Recipe

Preparation Time: 15 min

Ingredients:

  • ½  cup rolled oats
  • ½  cup almonds (whole)
  • 1½  tbsp Ghee (clarified butter)
  • 3 tbsp brown sugar
  • ¼  tsp cardamom powder
  • cup of water

Procedure:

  1. Dry roast the oats for a few minutes on low heat until they have an aroma. Continuously mix so the oats don’t burn.
  2. Remove them from the stove and let them cool down.
  3. Lightly dry roast the almonds on low heat.
  4. Remove the almonds from the stove & let them cool down.
  5. Transfer the roasted oats and almonds into a grinder and make a fine powder.
  6. In a nonstick pan, melt ghee on low heat.
  7. Add the oat almond flour and cook it until it is golden brown.
  8. Add brown sugar and cardamom powder. Mix everything well.
  9. Slowly add water and keep mixing for roughly 5 minutes until all the water has evaporated. You can tell this once the mix has thickened into a soft cookie dough consistency. You should be able to take the spatula out cleanly.
  10. Transfer the dough to a flat plate and gently press it with a big spoon or any flat-bottomed bowl to smooth it out evenly.
  11. Garnish the burfi with small pieces of almonds and pistachios. Slightly press them into it.
  12. Let it settle for 20-25 minutes.
  13. Cut the burfi into small pieces and enjoy it!

Special Tips:

  • Instead of the oat and almond combination, it can be made with only oat or only almond
  • Vitamix works best for the dry grinding
  • Try the recipe with pecans instead of almonds as a variety
  • To make it even quicker, ready-made oat and almond flour can be used in the recipe
  • Adjust the amount of sugar and cardamom according to your taste
  • If ghee is not available, use unsalted butter instead
  • It can be stored at room temperature for a day or two, but after that refrigeration is recommended
  • This nutritious and protein-rich burfi can be a good snack choice for the winter season
